Tofu Freezer Meals

Freezer meals are one of the easiest ways to get dinner on the table on busy nights. But most freezer meal recipes are built around chicken or beef, which made me wonder… could the same idea work with tofu?

Many people already freeze tofu because it creates a firmer, meatier texture. But there’s another benefit: as the tofu freezes and thaws, it soaks up marinades even better, giving you more flavor in every bite. So I decided to put it to the test.So I decided to put it to the test.

I prepped several different tofu freezer meals, froze them, and then spent the next few weeks cooking them in the air fryer, on the grill, in a skillet, and in the oven to see which ones were actually worth making again. The good news? Some of them turned out so well they’ve earned a permanent spot in my freezer.

Below are my four favorite freezer tofu recipes from the video: Southwest Grilled Tofu, Honey Sesame Tofu, Lemon Pepper Tofu, Greek-Inspired Grilled Tofu and my Tofu Italian Sausage. Each one takes just a few minutes to assemble, freezes beautifully for up to three months, and makes weeknight dinners so much easier. Whether you’re trying to eat more plant-based meals or simply want a few healthy dinners ready to go, these recipes are a great place to start.

Honey sesame tofu

Honey Sesame Tofu

Yield: 4 servings

Ingredients

  • 1 pound extra-firm Tofu
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • ¼ cup honey
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 2 green onions, sliced
  • ½ cup water
  • 1 teaspoon No chicken broth
  • For after freezing
  • 2 tablespoons cornstarch

Instructions

Label a gallon-size freezer bag with the recipe name and today's date.

Add all ingredients to the freezer bag.

Seal the bag, removing as much air as possible.

Massage the bag gently to coat the tofu.

Freeze flat for up to 3 months.

To Cook

  1. Thaw the freezer bag overnight in the refrigerator. If you're short on time,
    run the sealed bag under warm water until the tofu separates easily.
  2. Open one corner of the bag and carefully drain off any excess liquid into a bowl for later.
  3. Cook the tofu using one of the methods below.

Pan-Fry

  1. Heat 1 to 2 tablespoons of oil in a large skillet over medium-high heat.
  2. Add the tofu and cook for 3 to 5 minutes per side, or until browned and
    heated through.
  3. Add remaining liquid to pan to create sauce and add flavor and moisture.

Grill

  1. Preheat the grill to medium-high heat.
  2. Grill the tofu for 3 to 5 minutes per side, brushing with any remaining
    marinade if desired.

Crispy Pan-Fry

  1. Drain the tofu well and pat dry, if needed.
  2. Toss the tofu with 1 to 2 tablespoons cornstarch until lightly coated.
  3. Heat about ¼ inch of oil in a skillet over medium-high heat.
  4. Fry the tofu for 2 to 4 minutes per side until golden and crispy.
  5. Add remaining liquid to pan to create sauce and add flavor and moisture.
  6. Air Fryer

  1. Drain the tofu well.
  2. Toss with 1 tablespoon cornstarch and lightly spray or drizzle with oil.
  3. Arrange the tofu in a single layer in the air fryer basket.
  4. Air fry at 400°F for 12 to 15 minutes, shaking the basket halfway through, until
    crispy and golden.
  5. Tip: For the crispiest tofu, don't overcrowd the pan or air fryer basket.
    Cook in batches if needed.

Notes

Serve with Broccoli and rice or quinoa.

Southwest Tofu

Southwest Tofu

Yield: 4 servings

Ingredients

  • 1 pound extra-firm tofu
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ¼ teaspoon liquid smoke
  • ½ teaspoon garlic powder
  • ½ cup water
  • 1 teaspoon NO chicken Boullion

Instructions

Label a gallon-size freezer bag with the recipe name and today's date.

Add all ingredients to the freezer bag.

Seal the bag, removing as much air as possible.

Massage the bag gently to coat the tofu.

  • ½ cup water

These tofu freezer meals have become one of my favorite meal prep shortcuts. Spending less than an hour making a few bags means I always have a flavorful, plant-based dinner ready for busy weeknights. The freezing process doesn’t just make meal prep easier—it also helps the tofu absorb even more flavor, making these meals taste even better.
