    Pinspiration! Nutella Wreath

    So back to that oatmeal bread…we had some homemade Peanutella just sitting around and we saw this beautiful wreath on Pinterest that used bread dough and Nutella, so we thought we would give it a try.

     

    Isn’t it pretty? But to be honest I think I like it spread ON the bread better than cooked into the bread, because it gets kind of dry. It was fun to make and I think I could use this same wreath technique with date butter or cinnamon sugar like I did with the cinnamon roll  and it will probably come out better. We’ll have to let you know!

  • Pinspiration! Cinnamon Roll Creations

    Remember that oatmeal bread we made a few weeks ago? It is a very soft bread dough and works for many different things. I really like making date rolls or cinnamon rolls with it. Since the Ridzogirl is home from school for the summer we decided to have some fun with our rolls and we made a cute lamb and a star.

  • Pinspiration! Vegan 37 Calorie Brownie Experiment

    Valentine’s Day is throwing a wrench into my New Year’s resolutions Here at our house we decided to start up an exercise routine, avoid junk food and get back into shape. Now Valentine’s Day rolls around and everyone thinks I have to eat lots of candy and desserts!  It wouldn’t be Valentine’s Day without chocolate, right?!  I had decided not to give in to the pressure to make some ooey gooey chocolaty dessert for my Ridzoman, but Pinterest did me in again!

    There it was staring me in the face – a beautiful-looking 37-calorie brownie. I absolutely had to try it. It would be the perfect valentine for those of us trying to get back into shape.  Unfortunately my Pinspiration was quickly turned into Pinsapointment.  Edible, yes… great brownies, no.  In fairness to the original recipe I did make a few changes replacing the Greek yogurt and the egg with my usual substitutions to make it vegan, so it is possible that it could have been better the way it is written here.  Let me know if you have tried it.     Chili Cheese Fritos are not something I eat on a regular basis.  In fact I can’t remember the last time I ate them.  But when I saw this photo for homemade baked Chili Cheese Fritos I had to try them! Dana over at the Minimalist Baker is brilliant.  I had made homemade corn chips with tortillas before, but never tried the chili cheese flavor. So I made a couple of modifications to their recipe based on previous experience.

    Here is what I did:

    1.     I doubled the amount of nutritional yeast flakes that she suggested.

    2.     I noticed she had a lot of extra seasoning on the pan that did not stick to her chips. So before I cut the tortillas I sprayed one with cooking spray and then sprinkled it with the seasoning mix. Then I put another tortilla on top of the first one, and rubbed them together. Then I put the third tortilla on top of the first two, repeated the same action, and so on. When I had a stack of 5 or 6, I cut them with a pizza cutter into squares.  (Dana’s were much neater than mine.)

    3.     I also blended the seasoning up in my little spice blender so it was a fine powder.  I always do that for my popcorn too.  It sticks WAY better.

    Other than that I followed the instructions.  As you can see from my photo, Dana was right—the chips burn quickly! I would recommend stirring them every 4-5 minutes. The ones on the edges browned the fastest. Also Dana used all the seasoning on 6 tortillas and I had about half of mine left.  I will definitely use all of the seasoning next time.  But what I did use stuck to the tortillas very nicely.

    It was a perfect recipe for Super Bowl Sunday! I mean, healthy junk food. How can it get better than that? Definitely something I will make again soon. Thanks for the idea Dana!
