Creamy Tuscan Marry Me Meatballs

These creamy Tuscan-style meatballs are cozy, flavorful, and weeknight-friendly. Plant-based meatballs simmer in a rich, savory sauce with sun-dried tomatoes and spinach for an easy dinner that feels a little special.

Ingredients

  • 1 bag plant-based meatballs
  • 1 tablespoon olive oil
  • ½ cup onion, diced
  • ¼ cup raw cashews or ¼ cup vegan cream cheese or 1 box silken tofu
  • 1 cup water
  • 1 tablespoon garlic, minced
  • ¼ cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • ¼ cup nutritional yeast flakes
  • Salt, to taste

Instructions

  1. Bake the meatballs according to the package instructions.
  2. Blend the cashews and water until smooth. If using vegan cream cheese or silken tofu, blend with the water until creamy.
  3. Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until soft, about 5 minutes.
  4. Add the garlic and cook for 30 seconds, until fragrant.
  5. Stir in the blended mixture, sun-dried tomatoes, spinach, and nutritional yeast. Cook until the spinach wilts and the sauce thickens slightly. Season with salt to taste.
  6. Add the baked meatballs to the skillet and simmer for 3 to 5 minutes, until heated through and coated in the sauce.
  7. Serve warm over pasta or mashed potatoes with a green salad on the side.

Notes

Change It Up: Add sliced mushrooms or a pinch of red pepper flakes for even more Tuscan-inspired flavor.
