Making the Switch to a Vegan Plant-Based Diet

You have to decide…are you a cold turkey vegan or a gradual vegan? I recommend the gradual kind myself, but I know it is hard to keep eating foods that you know are hurting your body. You have to realize that every little bit does help. It is not have to be all or nothing.
If you are the gradual vegan, the best thing to do is to pick one day a week to try a new plant-based meal. If the family likes it you can add that one to your menu calendar and try another one the following week. If the family doesn’t like it, try something different the next week. Sooner or later you will have a complete month of recipes that the whole family likes that are all plant-based.
Now, if you are a cold turkey vegan… I recommend that you start off by taking the recipes you already enjoy and make them vegan, by replacing meat and dairy with vegan alternatives. You can also try some new things, but I find if you start eating all new foods right off it is hard to stick to a plant-based foods because you have such cravings for your old favorites. Besides, I find that vegan recipes are a little “hit and miss” I have had a lot of great vegan food, but I have also had my share of bad recipes too.
This weeks menu is….
Sunday – Lentil Vegetable Soup and Tofu egg salad sandwich
Monday – vegetable pot pie and fresh sweet corn
Tuesday – Pesto Pasta Primavera
Wednesday – Burritos
Thursday – Dal (Indian Lentils)
Friday – Mac & Cheese and Trees.
